What makes Milk worth taking about? And how is it medically important to the Human health? Well! For the start, it is definitely a food material of special importance. It is almost complete, an ideal food and contains most of the proximate principles of a well balanced diet required for human body. It is thus the nearest approach to perfect food. It forms the only diet for children to the age of a year or so. It is the best source of Calcium in diet both on account of quality and the valuable biological value to the body. Milk contains the following proximate principles:
1. Carbohydrates. The carbohydrate in all Milks is lactose or Milk sugar (4-5%). Human Milk contains more Lactose than cow's Milk.
2. Fats. Fats contain 3.5% to 4% of fats in emulsified form. Milk fat is a good source of Vitamins A and D when Milk is allowed to stand for sometime, fat rises to the surface as cream, Chemically, milk fat consists of some vital fatty acids.
3. Vitamins. It also contains all the vitamins except Vitamin E. In summer, cows feed on grass, produce Milk containing large amounts of vitamins B, C and D. But in winter, amount of Vitamins A and D in Milk is much reduced.
4. Mineral salts. Phosphates and chlorides of Calcium, potassium and sodium are all constituents of Milk. It is very poor in Iron.
The average composition of Milk from various sources is as follows;
Cow Milk contains 3.2% of proteins; 4.4% of Lactose, 4.1% of Fats; and 87.5% of water.Goat Milk contains 3.5% of Protein, 4.6% of Lactose, 4.5% of Fats and 86.5% of water.Human milk contains 1.1% of protein; 7.4% of Lactose; 3.4% of Fats and 88.0% of water.
Milk borne diseases
The Important Milk borne diseases are;
• Directly from the milked animal; Tuberculosis, Brucellosis, streptococcus infection, Malta fever and Anthrax.• Indirectly from the Human handler or environment; Typhoid and para-typhoid fevers, cholera, Dysentery, Diphtheria and Viral Hepatitis.

Cream
It is prepared by allowing the Milk to stand for a considerable time in the cold so that butter fat may rise to the top and then removing the top layer. The fat or cream may be separates from Milk mechanically through a centrifuge machine known as cream may contain about 50% fat. Besides Milk fat, cream contains proteins and lactose also.
Butter
It is the most nutritious and easily digestible form of all fats. Good butter should neither be varied nor have an unpleasant odor. Its average composition should be; water (12-15%), fat (80-90%), caseinogens (1-3%), Lactose (1%), ash (2-3%), salt and vitamins (very little variable amount).
Cheese
It is very concentrated protein food and methods of making it vary at different places. It is prepared by coagulating caseinogens of whole milk or skimmed milk with rennet. Cheeses differ by high content of protein (20-25%), fat (25-30%) and what is also important is calcium and phosphorus.

The fat content of different diary products varies a lot and much of this is saturated fat, which can raise cholesterol and is linked to heart diseases. Most cheeses contain between 20 to 40g fat per 100g. If you're trying to make the healthier choice, you don't need to avoid cheese, but it's a good idea to keep a check on how much you eat and how often. If you are using cheese to flavor a dish or a sauce, you could try using a very strong, tasting cheese.

Another option is to choose reduced fat hard cheeses, which usually contain fat (3g fat per 100g or less) including reduced fat cottage cheese and quark. If you are trying to cut down on fat, it is a good idea to go for semi- skimmed or skimmed milk and low fat yogurt. These products contain at least the same amount of protein, B vitamins, calcium, magnesium, phosphorus, potassium and zinc as full fat versions. They just contain less fat. Cream and butter are high in fat, so try to use them sparingly. You can use plain yogurt instead of cream or even sourced creams in recipes. Low fat spreads can be used instead of butter.

It is also worth remembering that some dairy products can be high in salt, and too much salt can cause high blood pressure (hypertension), which is also linked to heart disease. Adults should be eating no more than 6g of salt a day. Some flavored and malted milk products and shakes tend to contain added sugar which can be bad for our teeth. You can check the amount of fat, salt and sugar by looking at the nutrition information on the label. If you compare similar products, you will be able to choose the ones with lower amounts.

Diet and curative property
Milk does not excite gastric secretion enough. It is connected with small content of Nitrogen containing extractive substances. Influence of Milk products on the Organism

1. Sour Milk Stimulates appetite. It stimulates the secretory and mechanical functions of the intestine. Lactic acid improves the development of useful microbes in the intestine. It is a rational nutrition of all population groups but should not be taken when suffering from cases as; Ulcer disease of stomach and duodenum with increased acidity.

2. Kefir Milk stimulates appetite. It influences the secretory and mechanical function of the intestine. It improves the development of symbiotic microbes in the intestine. It is a rational nutrition of all population groups and should not be used in same cases as in sour milk.

3. Greasy Kefir Milk has same qualities as the first two aforementioned milk types only that it can also be recommended for patients with Diabetes.

4. Non greasy Kefir Milk has same qualities as well, but can be recommended for patients with Obesity, diseases of cardiovascular system and Liver problems.

5. Light Kefir (1 day) has same qualities as the previous, but in addition, it can serve as a laxative and hence indicated for constipation and spastic colitis.

6. Middle Kefir (2 days) has exact qualities as the first two milk types.

7. Strong Kefir (3 days) has same qualities as the first two milk types but in addition, it is used as an anti putrid and strengthening agent. It can be recommended for cases of Gastritis with decreased acidity, chronic Colitis and diarrhea.

8. Koumiss is milk with albumins and it is well digested in the organisms. It stimulates appetite, stimulates gastric secretion, activates peristalsis of intestine, decreases putrid processes in intestine, and eliminates mycobacterium tuberculosis, decreased acidity of gastric Juice, intoxication, exhaustion and anemia.

9. Light Koumiss is the same as koumiss only that it is a laxative and hence recommended or indicated for constipation.
10. Acid loving products are as follows; acid-loving milk and acid-loving yeast milk. They stimulate appetite; influence the secretory and mechanical function of stomach and intestine. They have considerable bactericidal properties, slow putrid processes in intestine. They are recommended for inflammation of the Large Intestine, dysentery, tuberculosis, constipation, exhaustion and ray disease. But should not be taken in diseases such as Ulcer disease with increased secretion, gastritis and Inflammation of the Pancreas.

11. Yogurt stimulates appetite, influences the secretory and mechanical function of the intestine. It has middle bacterial-killing properties and slow putrid processes in the intestine. A rational nutrition of all population groups, children's nutrition, prophylaxis of bacterial diseases caused by imbalance of the normal or symbiotic microbes in our bodies and it is contraindicated in Ulcer disease with increased secretion, gastritis and Inflammation of the Pancreas.

12. Sour Cheese (greasy middle and non greasy) partially fills the organism needs in proteins, essential amino acids, well digested calcium, growth and lipid digesting substances. At the same time, the mother's milk is also very rich in nutrients which accelerate the growth of brain cells and the development of the nervous system. 1 Artificial baby foods prepared with present-day technology cannot replace this miraculous food.

The list of advantages to the baby provided by mother's milk is being added to every day. Research has shown that babies who are fed mother's milk are particularly protected against infections concerning the respiratory and digestive systems. That is because the antibodies in mother's milk provide a direct defence against infection. Other anti-infection properties of mother's milk are that it provides a hospitable environment for "good" bacteria called "normal flora" thus constituting a barrier to harmful bacteria, viruses and parasites. Furthermore, it has also been established that there are factors in mother's milk which arrange the immune system against infectious diseases and allow it to function properly. 2

Since the mother's milk has been specially designed, it is the most easily digestible food for babies. Despite being nutritionally very rich, it is easily digested by the baby's sensitive digestive system. Since the baby thus expends less energy on digestion, it is able to use that energy for other bodily functions, growth and organ development.

The milk of mothers who have had premature babies contains higher levels of fat, protein, sodium, chloride and iron to meet the baby's needs. Indeed, it has been established that the functions of the eye develop better in premature babies fed on mother's milk and that they perform better in intelligence tests. In addition, they also have a great many other advantages.

One of the ways in which mother's milk is important to the development of the new-born baby is the fact that it contains omega-3 oil alpha linoleic acids. As well as being an important compound for the human brain and retina, it is also of great importance from the point of view of new-born babies. Omega-3 is of particular importance throughout pregnancy and the early stages of babyhood if the brain and nerves are to develop normally. Scientists particularly emphasise the importance of mother's milk as a natural and perfect store of omega-3. 3

Furthermore, research by Bristol University scientists revealed that among the long-term benefits of mother's milk are its positive effect on blood pressure, thanks to which the risk of heart attack is reduced. The research team concluded that the protective nature of mother's milk stems from its nutritional content. According to the results of the research, published in the medical journal Circulation, babies fed on mother's milk are less likely to develop heart disease. It has been revealed that the presence in mother's milk of long-chain polyunsaturated fatty acids—these prevent hardening of the arteries—along with the fact that babies fed on mother's milk consume less sodium—this is closely linked to blood pressure—and do not, as a result, gain excessive amounts of weight are among the ways that mother's milk benefits the heart. 4

In addition, a team led by Dr. Lisa Martin, of the Cincinnati Children's Hospital Medical Centre in the USA, found high levels of the protein hormone known as adiponectin in mother's milk. 5 High blood levels of adiponectin are associated with a reduced risk of heart attack. Low levels of adiponectin are found in people who are obese and who are at increased risk of a heart attack. It was therefore established that the risk of obesity in babies fed on mother's milk declined in relation to this hormone. Furthermore, they also discovered the presence of another hormone called leptin in the mother's milk which has a central role in fat metabolism. Leptin is believed to be a signal to the brain that there is fat on the body. According to Dr. Martin's announcement, therefore, these hormones absorbed in babyhood through mother's milk reduce the risk of such illnesses as obesity, type 2 diabetes and insulin resistance, and coronary artery disease. 6

Facts about "The Freshest Food"

The facts about the mother's milk are not restricted to these. The contribution it makes to the baby's health alters according to the phases the baby undergoes and whichever foodstuff is required at a particular stage, the contents of the milk change to meet those very specific needs. Mother's milk, ready at all times and at the ideal temperature, plays a major role in brain development because of the sugar and fat it contains. In addition, elements such as calcium in it play a large role in the development of the baby's bones.

Although it is called milk, this miraculous compound actually consists mostly of water. This is a most important feature because in addition to food, babies also need liquid in the form of water. Full hygiene may not be established in water or foodstuffs other than mother's milk. Yet mother's milk—90% water no less—, meets the baby's water needs in the most hygienic manner.

Mother's Milk and Intelligence

Scientific research shows that the cognitive development in breast-fed babies is greater than that in other babies. A comparative analysis of breast-fed babies and formula-fed babies by James W. Anderson—an expert from the University of Kentucky—established that the IQs of babies fed on mother's milk were 5 points higher than those of other babies. As a result of this study, it was determined that intelligence is benefited by mother's milk for up to 6 months and that children who are breast-fed for less than 8 weeks show no IQ benefit. 7

Does Mother's Milk Combat Cancer?

As a result of all the research performed, it is proven that mother's milk, on which hundreds of papers have been published, protects babies against cancer. This, despite the fact that the mechanism is not yet fully understood. When a protein from the mother's milk killed off tumour cells which had been grown in laboratories without damaging any healthy cells, researchers stated that a great potential has emerged. Catharina Svanborg, professor of clinical immunology at Lund University in Sweden, headed the research team that discovered these miraculous secrets of mother's milk. 8 This team at Lund University have described the way that mother's milk provides protection against many forms of cancer as a miraculous discovery.

Initially, researchers treated intestinal mucous cells taken from new-born babies with mother's milk. They observed that the disorder caused by the bacterium Pneumococcus and known as pneumonia was efficiently halted by mother's milk. What is more, babies fed on mother's milk encounter far fewer hearing difficulties than those fed on formula and suffer far fewer respiratory infections. After a series of studies, it was shown that mother's milk also provides protection against cancer. After showing that the incidence of the lymph cancer observed in childhood was nine times greater in formula-fed children, they realised that the same results applied to other forms of cancer. According to the results, mother's milk accurately locates the cancer cells and later destroys them. It is a substance called alpha-lac (alphalactalbumin), present in large quantities in mother's milk, that locates and kills the cancer cells. Alpha-lac is produced by a protein that assists in the manufacture of the sugar lactose in the milk.9

This Matchless Blessing Is a Gift from Allah

Another miraculous feature of mother's milk is the fact that it is exceedingly beneficial for the baby to be fed with it for two years. 10 This important information, only recently discovered by science, was revealed by Allah fourteen centuries ago in the verse: "Mothers should nurse their children for two full years—those who wish to complete the full term of nursing…" (Qur'an, 2:233)

In the same way that the mother does not decide to produce milk, the most ideal source of nourishment for the helpless baby in need of feeding in her body, neither does she decide on the various nutritional levels within it. It is Almighty Allah, Who knows the needs of and displays mercy to every living thing, Who creates mother's milk for the baby in the mother's body.

Milk a Without Question an Important Part of a Healthy Diet  

What is Milk?

Milk may be defined as the whole, fresh, clean, lacteal secretion obtained by the complete milking of one or more healthy milch animals, excluding that obtained within 15 days before or 5 days after calving or such periods as may be necessary to render the milk practically colostrums-free and containing the minimum prescribed percentages of milk fat and milk-solids-not-fat. In India, the term 'milk', when unqualified, refers to cow or buffalo milk, or a combination of the two. Milk naturally provides 15 essential nutrients for normal growth and for the maintenance of good health. In addition to its unique nutritional value, milk is fortified with vitamin D. This vitamin plays an essential role in bone health as well as many others. Milk is considered an ideal food. It contains almost all those essential nutritions which are required for the growth of the human body.

The Importance of Milk in the Diet:
  • Although milk from the cow is processed, it is not an engineered or fabricated food.
  • It is about 87 percent water and 13 percent solids. The fat portion of the milk contains fat soluble vitamins. The solids other than fat include proteins, carbohydrates, water soluble vitamins, and minerals. These nutrients in milk help make it nature's most nearly perfect food.
  • Milk products contain high quality proteins. The whey proteins constitute about 18 percent of the protein content of milk. Casein, a protein found only in milk, contains all of the essential amino acids. It accounts for 82 percent of the total proteins in milk and is used as a standard for evaluating protein of other foods. Protein is needed to build and repair body tissues and to form antibodies which circulate in the blood and help fight infection.
  • Milk contains the following nutrients: calcium, phosphorus, magnesium, and potassium.
  • The calcium found in milk is readily absorbed by the body. Phosphorus plays a role in calcium absorption and utilization. Phosphorus is needed in the proper ratio to calcium to form bone. Milk provides these two minerals in approximately the same ratio as found in bone. Milk is also a significant source of riboflavin (vitamin B2) which helps promote healthy skin and eyes, as well as vitamins A and D.
  • In adults, a calcium deficiency, along with other factors, may result in bone deterioration called osteoporosis. The recommendations for calcium is 1,000 milligrams for adults, 1,300 milligrams per day for adolescents, 500-800 milligrams per day for young children and 1,200 milligrams per day for adults over 51 years of age. It is difficult to obtain adequate calcium without milk and milk products in the diet.
  • About 73 percent of the calcium available in the food supply is provided by milk and milk products.
Food and Nutritive Value of Milk:
Milk is an almost ideal food. It has high nutritive value. It supplies body-building proteins, bone-forming minerals and health-giving vitamins and furnishes energy-giving lactose and milk fat. Besides supplying certain essential fatty acids, it contains the above nutrients in an easily digestible and assimilable form. All these properties make milk an important food for pregnant mothers, growing children, adolescents, adults, invalids, convalescents and patients alike.

Proteins
Milk proteins are complete proteins of high quality, i.e. they contain all the essential amino-acids in fairly large quantities.

Minerals
Practically all the mineral elements found in milk are essential for nutrition. Milk is an excellent source of calcium and phosphorus, both of which, together with vitamin D, are essential for bone formation.

Vitamins
These are accessory food factors which are essential for normal growth, health and the reproduction of living organisms. Milk is a good source of Vitamin A (provided the cow is fed sufficient green feed and fodder), Vitamin D (provided the cow is exposed to enough sunlight), thiamine, riboflavin, etc.

Fat (Ghee)
Milk Fat (lipid) plays a significant role in the nutritive value, flavour and physical properties of milk and milk products. Besides serving as a rich source of energy, fat contains significant amounts of so-called essential fatty acids (linoleic and arachidonic). The most distinctive role which milk fat plays in dairy products concerns flavour. The rich pleasing flavour of milk lipids is not duplicated by any other type of fat. Milk fat imparts a soft body, smooth texture and rich taste to dairy products. Lastly, milk lipids undoubtedly enhance the consumer acceptability of foods; they also serve the best interests of human nutrition through the incentive of eating what tastes good.

Lactose
The principal function of lactose (carbohydrate) is to supply energy. However, lactose also helps to establish a mildly acidic reaction in the intestine (which checks the growth of proteolytic bacteria) and facilitates assimilation.

Clarified butter is rendered milk fat which is obtained from butter and by separating the milk solids and liquids.   2. Once spluttering of butter has stopped and no more foam is rising, stop heating and skim off the foam with a spoon or by using a strainer.
  3. Line a strainer with a thin piece of cloth or gauze if available and carefully pour the butter through the strainer into a container leaving behind solids on the strainer.
  4. Clarified butter can be stored for 3 to 6months in the fridge or better yet it can be frozen and used occasionally to leave a taste of butter on your Deep fried dishes.

Indian Clarified Butter - The Types of Ghee BY Liz Canham

It's a well known fact that Indian clarified butter is used extensively in Indian cooking but very few non-Indians know that there are various types of Ghee.  Not only are there types of ghee which come from the various animals i.e. sheep, goat, cow and buffalo but there is also Desi ghee, creamery butter, direct cream and pre-stratification.

The difference between they types of ghee is simply the production process.  Whereas ghee is processed by machine and is not local to any particular area but is generally of uniform quality, Desi ghee is usually made at home, albeit sometimes in nearly industrial quantities.

No matter what the process, the basic upshot is that because the butter or cream is subjected to high temperatures, the moisture is removed.  Clarification usually takes place at between 110 and 120ºC except in Southern India where the required temperature is between 120 and 140ºC.

The Desi method of creating ghee involves boiling whole milk and fermenting it with a culture which turns it into curdled milk or dahi.  The dahi is then churned with a corrugated wooden beater.  The butter is separated and clarified into ghee by heating in an open pan.

The creamery butter and direct cream methods are better suited to commercial manufacture because more fat is retained and the direct cream method results in ghee which keeps better over time.  The pre-stratification method is thought to be economical because of low fuel consumption and it too is thought to have a longer shelf life although this method has not been tested on an industrial scale.

If you want to try the difference between the types of ghee by making your own, here are two of the methods.

Creamery butter ghee:

Separate milk and cream and allow the cream to curdle.  Churn the curdled cream and you end up with buttermilk and creamery butter.  Melt the creamery butter at a constant temperature which results in molten ghee.  Allow to stand for a while then decant into a container, discard the ghee residue.

Desi ghee:

Boil milk and allow to cool when lactic culture is added.  Allow to ferment for 10 to 16 hours until the milk has curdled and you have dahi.  Add a small amount of water and churn; this results in buttermilk and Desi butter.  Melt the Desi butter, allow to stand, decant and discard residue as before.

These are the two most common types of ghee preparation but of course the milk can come from the animal of your choice.
